How did we make chocolate feel a little cozy? We started with Belize cacao, with its cocoa and caramel character, then swapped the usual milk for Oaxacan green corn masa, adding a subtle toasted tortilla note to the melt. Finally, Cambodian Kampot red long pepper brings a gingerbread-like spice and a lingering little spark of heat.
